On the other side of North Africa, mint is preferred as a cooling ingredient for strong, heavily sweetened green tea. In Morocco, mint tea is served in small, colorful glasses, poured from beautiful metal jugs in a high arc so that as much oxygen as possible intensifies the flavor. We have the glasses, but not the jugs, which unfortunately are not completely residue-free.
